Shortbread Cookies

What an amazing cookie!  It is made with 4 ordinary ingredients, but one of the most wonderful cookies to make, to eat and to give as a gift to friends and family. Everyone loves this recipe.

Classic Shortbread
1/2 cup butter at room temperature
1/3 cup powdered sugar - unsifted
1/4 teaspoon vanilla
1 cup flour - unsifted

Cream the butter until it is light.  Cream in the powdered sugar, then the vanilla.  Now work in the flour.  Knead the dough on an unfloured board until nice and smooth.  Spray the shortbread pan (or cookie sheet) with a non-stick vegetable oil spray.  Firmly press the dough into the shortbread pan (if you are using the cookie sheet - press the dough out to about a 1/2 inch thick circle or square).  Prick the entire surface with a fork, bake the shortbread right in the pan for about 10 minutes, or until very lightly browned.  Let the shortbread cool in its pan for about 10 minutes before you loosen the edges with a knife and flip the pan over onto a wooden cutting board.  If the shortbread does not come right out, tape one edge of the pan.  Cut the shortbread into serving pieces while it is still warm.

I found these wonderful shortbread cookie molds many years ago in a cooking store and over the years have made hundreds of shortbread rounds to share with friends and family.  They are made by a company called Brown Bag Cookie Art - http://shortbreadpan.com/
This shortbread cookie recipe is one that came with the mold from Brown Bag Cookie Art

Bake a batch and have a friend over for tea/coffe and great fellowship.
